Watermelon salad.
OK, this falls under "cold foods," but to be specific:
Dice some watermelon and toss it with chopped red onion, crumbled feta cheese, a dash of balsamic vinegar and some kosher/coarse salt. YUM! (Even better if you let it sit a bit so the watermelon gets all onion-y.) I can't explain why this is so good, but it's sweet, salty, tangy... well, I guess that's it.
Some people put in greens (like cilantro or even arugala or baby spinach) or a bit of hot pepper (chop a jalapeno, maybe?). Others put in oil, but I really don't think it needs that. If you don't like, or don't have feta, I bet any other tangy salty cheese (ricotta salata, goat cheese, even blue cheese for those that like that) would work.
Mmmm, will you come and make it for us?
I don't want to go outside until the temp. cools! But come on over, I made plenty last night and it gets mushy after about 24 hours so we should eat it right now.
